This is the best gazpacho recipe. I'm not even going to attempt to play it down. It's the perfect light meal or starter for Summer, because it's refreshing and restorative and you can almost feel the goodness as you drink it. It's exactly what you need on a hot day when you don't have the energy or the appetite for a full-on meal. It's a healthy, refreshing raw vegetable soup from Andalusia which it is consumed all over Spain and the world.
